Summer is definitely the time for grilling at our house, and it always makes me think of my dad. He LOVES to grill, and I remember some fantastic meals growing up that were served right from our backyard grill. While I wish we could be with him on Father’s Day today, I feel like he is here in Florida in spirit, even if he’s really in Georgia today.
When I asked him last week for a new (and easy!) idea for using our grill, he suggested pizzas! I mean, why not? I picked up a few simple ingredients at the store, and we had a “make-your-own-pizza night” at our house. We came up with two pizza varieties: one spicy and one mild. I’m calling them the “Hawaiian Heat” and the “Mediterranean Mild” pizzas, and they took about 15 minutes to make. Perfect for lazy summer nights when we’re already tired from the beach or the boat!
